Breakfast Cakes
*****
Slice & saute in olive oil:
Onions
Red Peppers
Shred & Drain:
Zuchinni or Summer Squash
then add to saute pan
Set aside to cool
*****
Dice & Boil Sweet potatoes
Drain
Add drained can of Pinto beans
Mash & set aside to cool
*****
Combine 2 above mixtures & Add: salt, pepper, curry powder, mustard seeds to taste
Mix in some eggs & milk & pancake mix
Heat pan w/ Olive Oil & cook them
~~~ these would be great with shredded carrots, roasted corn, black beans..... too ~~~

Bean Dip for Baked Chips
1 large can Refried Beans
1/2 Mashed Butternut Squash
1/2 c Sour Cream or cream cheese
Hot Sauce or Green salsa (to taste)
Shredded Cheddar (small amount)
(saute OR grill -> then dice small -> then add to mixture above)
mushrooms
red peppers
zucchini
asparagus
kale
Mix all sprinkle a little more shredded cheddar on top
Bake @ 400 until heated through
Best served w/ Baked Tortilla chips

5-Ingredient Cookies
YUM, I used TRADER JOES Almond Cocoa spread. YUM
5-Ingredient Cookies
Recipe by Fabio Viviani
Yield: 12-18 cookies, depending on scoop size
Ingredients:
1 cup chocolate nut spread (like TRADER JOES Almond Cocoa spread or Nutella)
2 tbsp. brown sugar
1 egg
¾ cup flour
coarse sea salt
Method:
Preheat oven to 350F.
In an electric mixer with the paddle attachment, combine Nutella, brown sugar, and egg.
Mix on low speed, until blended.
Slowly add the flour and mix just until a dough is formed. Do NOT over-mix.
Scoop cookies onto a sheet tray lined with parchment paper. Top each with a sprinkle of sea salt.
Bake for 10 minutes.
Cool cookies before removing from sheet tray.

Mushroom Burgers
so I had the best Mushroom burger a while back at Grizzly Peaks in Ann Arbor. Since that time I have wanted to try making them, because NONE I have found in the groceries even come close....
I couldn't find anything on the web that sounded like theirs (which their menu said had mushrooms, parmesan & cream cheese), so I tried to merge that with some recipe concepts off the web....
Dice & Saute in Olive Oil:
- Mushrooms
- Portabella Musrooms
- Onion
- Garlic
quick Puree (not too much) in processor:
- drained/rinsed Pinto beans
- toasted (unsalted) Soy Nuts
- cream cheese
Mix all above w/:
- Montreal or some other spice blend
- (small amount) A1 steak sauce
- Fresh Parmesan
- Bread crumbs
once the taste is balanced to your preference, Add Egg White, mix
Shape
(freeze or cook right away!)
Grill, Broil or Stovetop
