Bean Dip for Baked Chips

1 large can Refried Beans
1/2 Mashed Butternut Squash
1/2 c Sour Cream or cream cheese
Hot Sauce or Green salsa (to taste)
Shredded Cheddar (small amount)

(saute OR grill -> then dice small -> then add to mixture above)
mushrooms
red peppers
zucchini
asparagus
kale

Mix all sprinkle a little more shredded cheddar on top
Bake @ 400 until heated through

Best served w/ Baked Tortilla chips

  1. We use Greek Yogurt in place of sour cream a lot - I wonder if that would work here or not?!
